NZ Sommelier of the Year 2024 Awards Dinner: In the Kitchen
Chef Finn and the Cookery Level 4 students designed the following menu paired with wines from NZ Sommelier partners.
Canapés served with Quartz Reef Methode Traditionnelle from Central Otago.
Entrée - Hapuka with gratinated crust of pumpkin seeds & gremolata, grilled pumpkin and brown butter vinaigrette paired with Čuvar Iris Chardonnay 2022.
Main - Lamb loin with tian of roots, onion compote & watercress. Lamb Jus, foamy garlic paired with Hans Herzog Tempranillo 2018 & McArthur Ridge Southern Tor Alexandra Pinot Noir 2023.
Dessert - Á la ‘Tarte Tatin’ with caramelized apples & rosemary ice cream paired with Matahiwi Late Harvest Sauvignon Blanc.
