Cookery, Advanced 16 weeks

What will I learn?

This advanced program concentrates on the principles of French cuisine and provides a thorough grounding in culinary arts and wine knowledge. For 16 weeks you will be immersed in cooking, eating and thinking wine and food.

Speed, accuracy and consistency are characteristics that you will develop and as your confidence grows you learn to correct mistakes, adjust seasoning and enjoy experimenting with flavours.

The programme commences with skills such as stock making, soups and classical sauces. Baking is an important element with breads, pastries and cakes. Butchery, boning and filleting skills are also covered. Other sessions include ice creams, sorbets, custards and meringues.

A Mediterranean workshop teaches pasta making and you are able to invite a friend to sample a Mediterranean meal that they have designed, costed and cooked. Asian ingredients are also introduced and integrated into the menus.

Menu planning and costing helps you develop an awareness of food costs while learning how to create a well balanced menu. During the programme you will work individually to design menus for specific occasions and within a set budget. This helps your understanding of the skills required to succeed in a hospitality and culinary environment while further developing your general knowledge of cookery.

Wine is an important component of the programme and your understanding of its relationship with food is exciting and stimulating. You will learn how to evaluate wines while tasting blind and to understand wine making. You will also cover the principles of matching wine with food.

Entry Requirements

  • Aged 18 or over
  • Completed Foundation Certificate in Cookery (or equivalent industry experience)
  • Attend an interview
  • Upper intermediate level of English
  • Valid student visa for international students

Further study Pathways

Graduates can return to NZSFW to study Advanced Cookery, the Advanced WSET® Sommelier programme or enrol in the Restaurant & Cafe Management programme if they wish to eventually own their own hospitality business.

Career Opportunities

Graduates will be able to work in all fields of their chosen specialisation including hotels, resorts, luxury lodges, cruise ships, international yachts, fine dining (5 star) restaurants, cafés and caterers.

Graduation placement service

All graduates have access to the NZSFW Graduate Placement Service when it is time to seek employment. This service is also available for industry placements during your studies.

Course Fees

New Zealand Students/Australian Students:

  • NZ$4,200

International Students:

  • NZ$9,875

New Zealand residents are eligible for student loans and allowances. Fees do not include knives, chef's uniforms or personal equipment. This is estimated to be NZ$1,000.
